2020 garden harvest!

We had quite the garden harvest this year!

I can't tell you how many days & nights we spent harvesting & canning all the things!

I started out by freezing some sauces until I quickly found out we had more sauce than freezer space!

As you know, I'm not the biggest fan of canning.  I learned to tolerate it this year only because I knew I was making some great sauces!

My husband helped out quite a bit with the tomato processing.  Our tomatoes had tons of seeds in them so he helped by removing all of the seeds.  He used a grapefruit spoon to dig out the seeds & it worked perfectly.  It may have taken some of the tomato meat with it, but having a sauce without seeds is totally worth it.

We ended up with about:
- 30 jars of pasta sauce
- 10 jars of salsa
- 12 jars of pickles
- 8 jars of relish

The only way I could tolerate canning all the sauces was to work in small batches over several days.  It's not the most efficient way to do things, but it worked for me. There are several stopping points in making a sauce & I definitely took advantage of them.  Doing it all in one day would have been too much for me this year.

This has been the biggest harvest we've ever done.  Even though 2020 has been a terrible year, the garden is one good thing that came out of it!
